In the first episode of his new YouTube series Burger Lab (no relation to Kenji's Burger Lab), Top Chef: All-Stars winner and burger restaurateur Richard Blais shows you how to make his barbecue-inspired Smoking Gun Burger. The burger features a brisket patty seasoned with salt, pepper, garlic powder, onion powder, and dehydrated Worcestershire sauce. He cooks it on a grill pan coated in beef fat and later adds garlic, rosemary, and thyme to the pan. For accompaniments, he tops the patty with smoked barbecue brisket and bottoms it with coleslaw made of cabbage, carrots, scallions, and dill seed mixed with liquid smoke-flavored mayo and bread and butter pickling liquid. All of this goes between the halves of a potato bun brushed with beef fat and toasted on the grill pan. The final touch: smoking the entire burger with a Smoking Gun.
