Michael Bauer Says He's Found the Best New Burger in SF

Published: April 7, 2010 Last Updated: September 4, 2019

Until he discovered the burger at Marlowe in San Francisco, the Chronicle food critic was keen on Zuni's creation. But, now, Mr. Bauer declares, the Marlowe burger has renewed his interest in finding the best burger in the city:

I now have renewed energy to try again because I think I've found something that might best [the Zuni burger]: the burger at Marlowe. The secret: the moist patty is made with a 80/20 percent lean to fat ratio with a little lamb mixed in to give a bolder, earthier flavor. The grilled meat is then placed on a Acme bun with a slather of horseradish aioli, crisp bacon, cheddar cheese, caramelized onions (which I normally don't like on my burger) and cold shredded lettuce.
