Results from last week's poll
With 45 percent of the vote, "medium-rare" was the most popular response in last week's poll about how you like your burger cooked. The second most popular temperature was medium (31 percent), followed by medium-well (12 percent). Well-done and rare each captured 6 percent of the vote. Texture issues, confidence in the restaurant, and whether you're at home or eating out all came into play in determining your preferred temperature. Here's what some of you had to say in the comments:
A rare burger is a must! But it needs to sit for a minute so that the bun doesn't get destroyed by lost juice. Another nice thing about being able to order a burger rare or medium-rare at a restaurant is that it usually means they grind in-house. Where I live, that is a requirement for serving a burger cooked less than medium.
Anything past medium well is not cooked, just burned. I order them rare and 99% of the time get them medium-rare. It seems most of America's restaurants simply cannot afford to give every cook a thermometer.
I like a steak medium-rare and I'll go for steak tartare if I grind the meat myself, but I can't really bring myself to order anything less than medium at a restaurant if I do order a burger. If I'm grilling a patty at home and I know the source of the meat, then I'll go rare/medium-rare.
