Last week, when we asked about burger execution issues, a significant amount of AHT'ers said a soggy bottom bun is their number one deal-breaker. That's in addition to several comments addressing bun choice, and the all-important bread-to-meat ratio. Last week, we asked you which burger execution issue is the most unforgivable, and boy, did you have a lot to say! Here are just a few of the comments:
Most unforgivable to me is adding stuff into the hamburger so you end up with a patty that has the texture of meatloaf. Meatballs and meatloaf have their place, but do not call them a burger. Extra lean hamburger runs a close second as being disgusting.
I would have added a burger that is improperly assembled. From being lopsided or off center on the bun so it falls apart when you eat it and topppings just go all over the place, to the incorrect layering of ingredients such as putting sauces on the bottom bun. Yes it is a wide topic, but a poorly assembled burger is perhaps the most common and can be the cause of the other symptoms on the list.
One word: brioche.
The most common deal-breakers were lack of seasoning/bland beef (30 percent), burger not cooked to requested temperature (28 percent), and soggy bottom bun (21 percent). Significantly fewer AHT'ers have issues with beef that's ground too fine or is too tightly packed (9 percent), a lack of char/browning (6 percent), or sub-par toppings (5 percent).
