"After eating my way through Maine for two weeks in August, I had finally tired of fried fish sandwiches, lobster rolls and blueberry pie and happened upon Little Notch Bakery in Southwest Harbor, where the students from Eastern Europe who were working there for the summer were serving homemade "Ukranian Style Borscht." The delicious soup inspired a pretty successful burger experiment. I topped 1/2 lb grass fed patties with a mixture of roasted and cooled beets tossed with sauerkraut, fresh dill, sautéed onion, carrot and potato, and a dollop of tart plain yogurt, atop a nice piece of German rye bread."—Sue
