"Home ground chuck and short rib cooked sous vide at 54C then finished on a hot skillet. Ken's Artisan Bakery ciabatta roll with red onion jam, roasted pepper aioli, walnut arugula pesto, quick cucumber pickles, and a constructed American cheese slice using Borough Market Cheddar, Temptin, and Widmer Citra Blonde beer. "This burg was made from 80/20 ground chuck, cooked smash style in a cast iron pan with a generous dose of salt, pepper and American cheese. White onions were fried in the burger juices while patty rested and some shredded iceburg was tossed in some pickle juice. I finished off this burger with some yellow mustard /relish on the bottom and a healthy spread of my hybrid california/Sriracha burger sauce on top. The soft butter toasted roll was just sturdy enough to hold this juicy little mother together until the last bite."—effanzo_mane
