"Late night snack, homeground double cheeseburger with sriracha and slow slow caramelized onions. Made from brisket and clod. Squidgy roll (soft white pre-sliced). As always, cooked in cast iron skillet, in home-rendered pork fat. Nothing but coarse ground meat in burger, seasoned with table salt and fresh black pepper just before cooking. Caramelized onions put on top after flip, then cheese slice on top of them for last half of cooking. Bun warmed in cooking fat as burgers rest briefly." —bfg67
