How Grant Achatz Makes a Charcuterie Burger

In the April issue of Men's Health, award-winning chef Grant Achatz of Alinea in Chicago shares his recipe for his reinvention of the burger: the Charcuterie Burger. You can read more about it, including Achatz's brainstorming notes, and watch an instructional video at Men's Health blog Guy Gourmet. The making of the burger as shown in the video goes like so:
- Cook chunks of bacon on high heat with shallots and caraway.
- After bacon and shallots mixture cools, mix with beef and grated Gruyère cheese. Gently form into patties.
- In very hot pan, cook patties. After flipping, add thyme and garlic. Transfer pan to oven, cook for one and a half minutes.
- Slice apple into thin rounds through core (cut out core with bottlecap). In pan, caramelize apple slices.
- Make sauce gribiche.
- Top burger with sauce gribiche and caramelized apple slices.
