Washington, D.C.: At RFD, Bet Big on Buffalo

At first glance, RFD in Washington, D.C.'s Chinatown looks like just another tourist bar and grille. Maybe it's the reflection from nearby Fuddruckers and Hooters restaurants in the windows that help hide this local standout. A step inside isn't inspiring until you reach the bar area, where RFD (standing for "Regional Food and Drink") sports a few dozen of its hundreds of beers ready for your palate.
And you'll do well to pick one of those beers to wash down RFD's buffalo burger: a half-pound of rich, meaty ground bison served on a passable bun with minimal vegetation competing for your taste buds' attention.

I ordered the buffalo with a slice of cheddar cheese and bacon on top. Meat was cooked medium, as per recommendation from the menu based on the leanness of the meat. That medium was spot on with a nice strip of pink through the patty.
Despite warnings on the lack of fat in the buffalo, my patty was possibly the juiciest I've eaten at a burger restaurant. The molten fat that remained in my burger was some of the most flavorful juice I've tasted. I detected no other seasoning on the meat, which made the explosive, rich flavor that much more impressive.
While I usually enjoy a lot of lettuce, tomato, and onion on my burgers, the cooks at RFD don't let vegetables get in the way of good meat. Shredded iceberg fits entirely within the bun's circumference. The tomato was just an old tomato. Cheddar cheese was a good topping but didn't seem necessary once I tasted the bison. Bacon added some complexity, but wasn't integral to my enjoyment.
For all the hype RFD's bison meat deserves, they've obviously skimped on the bun. While the correct amount, the bread involved could just as easily been bought at my local grocery store. Pure white, chewy bread, while comforting in that mom's home cooking type of way, did not fit with this sandwich.

If you're stuck in downtown Washington and need to avoid tourist standbys, drop into RFD for a surprisingly good Chinatown burger. Which beer to drink with it? That's another review all together....—Ben Roode
