Even when you're sitting in the passenger seat—trying to stretch a bag of M&Ms over 300 miles—driving is hungry work. Luckily, before I left for my honeymoon trip up the California coast I discovered Sylvester's Burgers, a family-owned burger shop that has been serving hearty, home style burgers for over 20 years.
Sylvester's offers 13 different types of burgers, all of which come in 1/3 pound and 1/2 pound sizes and are made from fresh, never frozen 80/20 choice ground beef. Hearst Ranch grass-fed beef, chicken breasts, turkey burgers, garden burgers, and black bean burgers are also available. The location (four miles off Highway 1 midway between Los Angeles and San Francisco) made it the perfect spot to stop for lunch en route to San Simeon.
Hours before we arrived, I already perused the menu online and knew what I wanted: the Chipotle Burger with fries and some of the famous Sylvester's sauce. When the food was delivered to our table, it was difficult to hold back for long enough to take photos. From smell alone, I was confident that the charbroiled coarse-ground patty, smoky chipotle sauce, and squishy sesame seed bun were everything I had hoped for.


The burger had a rich, steak-like beefy flavor that reminded me of pure and simple backyard barbecue burgers from my childhood. The coarse grind of the perfectly seasoned beef and charbroiling over an open flame gave the patty incredible texture: The flecks of char on the outside contrasted with the juicy, flavorful center.

The spicy upgrade by way of the chipotle sauce (imported from Mexico) elevated an already delicious burger to new heights. It was generously smeared with enough sticky, spicy chipotle to make even the most experienced palate feel the burn. From a flavor and texture standpoint, this was a burger in perfect harmony. The hotness of the chipotle was nicely balanced by a thin layer of mayo on the bottom bun, a slice of pepper jack cheese, and fresh, crisp toppings (the standard lettuce, tomato, and pickle).

The fries were topped with a few shakes of seasoned salt and served with a side of Slyvester's Sauce (free upon request to dine-in customers). The sweet and slightly spicy sauce had the consistency of mayo and tasted like it was made using every condiment in the kitchen. Owner Brian Englund confirmed that it contains a bit of everything, including horseradish, garlic, ketchup and mayonnaise. In any case, it was a welcome addition because it cooled my tongue and added another dimension of flavor and texture to an already tasty side of fries.
Slyvester's will now and forever occupy the soft-focus place in my mind where my best food memories are stored, along with the first time I discovered brownie batter, and memories of fried ice cream from Chi Chi's. If it weren't six hours away, I'd definitely be a regular.
