Kevin Pang's '16 Pearls of Cheeseburger Wisdom'

It's a cheeseburger! Yay! [Photograph: Robyn Lee]

What has Kevin Pang learned after eating nearly 60 burgers while doing research for The Cheeseburger Show? Read his 16 Pearls of Cheeseburger Wisdom on the Chicago Tribune to find out. He gives the thumbs up to toasted buns, griddle top cooking, fries fried in beef tallow, and the trinity of bacon, cheese, and caramelized onions.

well well well, that guy is one sharp cookie.

I agree vehemently w/ many of his "pearls."
-ketchup and mustard are overated as condiments (a good burger needs no condiments
-a1 peppercorn burger is a damn fine burger and red robin took it off the menu because they didn't use the peppercorn sauce on any other recipes (for shame!) popular opinion brought it back (YAY US!)
-lettuce and tomatoes get in the way (BRAVO! see parenthetical remark to first bullet point)

No 16 is the only rule anyone should pay attention to. All the others are of no concern to me.

Rule # 16:
The biggest rule of all: There is no rule.
If it tastes good to you, it tastes good.

That writer sounds like a real uptight, opinionated idiot. And he is a douche for using both "unctuousness" and "mouth feel" in the same piece. Probably found them on the same page of his "Food Blogging for Hipsters" manual.
