Dear AHT: 'Kenji's Fake Shack Burger'

Wow. Talk about fast turnaround. Philip Given must have really liked J. Kenji Lopez-Alt's Fake Shack recipe from today's Burger Lab installment. Philip just sent this over.

Dear AHT, Letters From Our ReadersI'm currently (as in, having it for dinner in 20 minutes) in the process of making it. Went to market today and got the cuts, came home and just finished prep. Thought you'd enjoy these; I'll send the rest over once eatin' is over.

Here she is all finished.

They were great burgers, and i'm glad Kenji shared his insight.

You can see full size pictures and some bonus market shots (warning: dead piggies enclosed) here.

Glad they worked out!

Where are you from that you can buy suckling pigs in the supermarket?!?

I notice you didn't find Martin's rolls, but I'd gladly trade Martin's for suckling pig any day!

Haha. I can definitely get Martin's rolls (as well as 3 other brands of potato rolls) i'm only 40 minutes or so from Martin's, just opted for some ones I got at market instead.

Re: Pig, I can drive to three farmers markets here in York and get me a suckling pig, and with a weeks notice a whole hog. It's a great thing.

@Prairie

Ah - I shoulda noticed you're from PA.

That is a great thing! Jealous!

Those folks at Martin's are the nicest salespeople I've ever talked to. I once ordered 10 palettes of slider rolls (that's only about $90 or so for an order that big) and needed them in a rush, and the driver made a special delivery to Boston on a day that they normally don't even come to the city just to be able to deliver them to me on time. Great folks!

That's really awesome, they are great people. I thought about contacting them to do a tour / photo piece on the factory as they are popular on SE and everywhere with their coveted rolls, I think it'd be really popular.

@prairie

were you trying to recreate the Shack burger or just make great burger? not to be a downer but that doesn't really look like a Shack burger.

it does however look like an effing delicious burger...
