Blogwatch: The Ultimate Umami Burger

Diane and Todd of White on Rice Couple say they used to call their popular burger "magic meat" until they recently chose to change the name to "the hamburger loaded with umami" after that "magic" flavor that makes everything tasty. More specifically, the umami in this recipe comes from the fermented fish sauce-based marinade, as used by Diane's Vietnamese family while she was growing up.

Diane and Todd say fish sauce in small quantities won't make burgers taste fishy, but will bring "fabulous umami savoriness to the burgers." Sounds promising to me. Check out their recipe to make it yourself.

Has anyone else ever made fish sauce-marinated burgers?

I agree, a little fish sauce in the burger prep is not a totally crazy idea. Worcestershire sauce achieves a similiar effect with the anchovies and all. As far as the linked recipe, I'll pass; fresh garlic is just one of those things I don't think ever belongs in a burger.
