Note: This week we're grilling Tommi Tómasson, proprietor of Hamborgarabúllan in Reykjavik, Iceland. He fell in love with burgers as a teenager, a love that is still with him today at 60-years-old and shows no sign of abating.

How often do you eat burgers? At least one every day for the past five years.
Where did you eat your most recent one? At my restaurant.
Cheese: American, cheddar, other? American and cheddar mix.
Ketchup or mustard? Ketchup, mustard, and mayonnaise.
Sesame-seed or plain? Plain.
Grilled, griddled, or broiled? Char-broiled.
And how would you like that done, sir? Medium to medium rare (depending on the quality of the beef).
Would you do us the favor of describing your perfect burger? 1/3-pound chuck/prime meat coarse grind, char-frilled medium rare with lettuce, tomato, red onion, and a small pickle with ketchup, Dijon mustard, and mayonnaise.
The hamburger is a food item with which most Americans have strong childhood associations. Do you remember your earliest encounter with this delicious dish? Yes; when I was 14-years-old. It was wonderful.
What's your favorite fast-food burger? In-N-Out.
What topping or condiment, in your opinion, should never grace a burger? Garlic.
What's the most unusual burger you've ever eaten? Reindeer burger.
What's the most overrated burger you've tried? Most underrated? Five Guys is the most overrated and the Hard Rock burger is the most underrated.
