How could a cheeseburger look so gooey and meat-splodey (that is, on the verge of exploding with meaty goodness) but pristine at the same time? Why must Matt Armendariz of food porn-laden MattBites taunt me with his green chile cheeseburger topped with roasted Hatch chilies? Why am I looking at this burger on an empty stomach? Excuse me while I sit in a corner and cry as my stomach rumbles in non-cheeseburger-filled sorrow.
It may photograph better this way, but any New Mexican will tell you that the cheese should be melted over the chile. Having just returned home to the Land of Enchantment after six months in Vermont, you have reminded me that I need to go out and get myself one of these this week or at least grill my own.
BwaaHaHaHa! Sorry to gloat, but I LIVE in NEW MEXICO and I have 30 pounds of fresh roasted Hatch green chile in my freezer right now, and will be buying more from the small growers in Corrales, Bernalillo, Chimayo and especially from Santa Ana, Sandia and San Felipe pueblos. There is nothing that compares with the smell and taste of fresh roasted chile. We put it on everything but our cereal in the morning.
So jealous. I crave the Bobcat Bite GCC almost daily. They are roasting now in Santa Fe and I'm missing it. I just read in the NY Times though that Foragers Market in DUMBO has fresh green chiles this week.
I do believe that there several other notable green chile cheeseburgers that I always look forward to when I travel through NM.
Buckhorn Tavern, (San Antonio Nm.), El Camino Restraunt (Socorro, NM.)
Both of these are on the way as you travel north through NM.

Dang. Now I'm grumpy I haven't placed an order for Hatch chiles yet. Why do I have to live so far from New Mexico?!?

I saw that and I was like: looks like he's trying to replicate a Bobcat Bite burger. Then I clicked in a read their posting.

I like chili peppers in Mexican food but not on my Burgers!
One question, why is the Bun Trimmed that way?
