A commenter to the most recent AHT post on In-N-Out lamented, "I can't claim to be an In-n-Out expert, but I've been led to believe that the burgers used to be even better when they could cook them medium-rare. After bad burgers made some people sick somewhere else (Jack in the Box?), they mandated that all burgers be cooked to a less juicy medium-well."
But someone claiming to be an In-N-Out associate commented back: "Just so you know, you can get your meat cooked to order. Just specify to the order taker that you want your burger either med-rare or rare, and they'll be happy to cook it for you. We have the safest meat in the nation at the cleanest facillity in the nation....no joke. Eat w/o worries. :) "
I have had mixed sucess with this. Sometimes yes, sometimes no. I really prefer mine rare. There was a time when you could order rare anywhere. In the late 70's I used to go to Wendy's and get a DBL Cheeseburger cooked 10 sec on each side! YUMMY!
Med-well? Wow, you're lucky. Up here in Canada, or at least in the province of Ontario, all burgers served at any sort of eatery have to be well done. Thanks, but I don't eat hockey pucks. Yechh. I make my own own med-rare burgs at home because of this. (Always take care about refrigeration.)
Isn't it amazing that people can eat raw oysters just about anywhere? Several people actually die every year from this, and the risk is far greater than eating quality beef rare! I have no use for dried out hicky pucks either. Some chains have adapted to at least make a fairly moist cooked burger. McDonalds for example at MOST of their stores. The meat is about MED WELL not WELL WELL! Go to Wendy's today, and their standard is a WELL done DRIED OUT burger. I'll hand it to IN and Out, at least their burgers are moist even when I don't get rare!
