While others burger makers are getting rid of "pink slime"—ammonia hydroxide-treated beef trimmings—Umami Burger is bringing it back. ...Sort of. They named a burger after it. The description from their Facebook page:
Feast your eyes and test your tastebuds on our newest creation, the Pink Slime Burger: our custom ground, all beef patty topped with Chicken Liver Mousse and Umami Spray Jelly - no scraps, trimmings or additives involved.
They'll be serving it at Taste of the Nation in Los Angeles on June 10. No word on other availability. (...Also, no idea what "Umami Spray Jelly" is.) Update (6/5/12): Umami Spray is available in Umami's online shop. The product description: "Known in Japan as Mizushio, Umami Spray blends together umami, kombu, and all-natural plant and seafood essences infused into a water-based spray."
