I'm sorry you were disappointed that the burger you were served at the Union Square Heartland did not look and taste exactly the same as the one you've enjoyed at HB Burger. Our intent was to reproduce that exact same burger. In fact, to accomplish this we spent $5,000 to install a new griddle and reconfigure our fire suppression system. We are using the exact same LaFrieda meat at the Union Square Heartland as we do at HB Burger.
However, you are correct, the patty is larger (eight ounces as opposed to the six-and-a-half-ounce one at HB Burger), which might explain the difference you noticed. (I will ask the staff to monitor the griddle temperature and cooking time more carefully.) You are also correct that we are currently not using a Martin's potato roll at the Union Square Heartland. The problem is, while we requested it, Martin's currently doesn't produce a potato roll large enough for an eight-ounce burger and I didn't want to reduce the size of the patty there because our customers there have come to expect one of that heft.
However, I concede we can't have it both ways (leveraging the well-deserved critical acclaim of the HB Burger, but serving one at our other locations that's slightly different), so we've decided that starting January 1st, we will begin serving the same six-and-a-half-ounce burger on a Martin's potato roll at the Union Square Heartland (as well as the new Heartland opening around that time at 8th Avenue and 41st).
